This twice baked sweet potato recipe offers all the flavor of those in the restaurants without all that extra fat. Sweet potatoes are high in vitamin C and vitamin A. They are filled with antioxidants and have a low glycemic index which is great for those with diabetes. This side dish is a flavorful way to eat healthy! Twice Baked Sweet Potato Recipe Serves 6 6 sweet potatoes, even in size and scrubbed4 tablespoons brown sugar4 tablespoons butter, room temperature4 ounces cream cheese, room temperature1/2 teaspoon ground cinnamon1/4 teaspoon ground nutmeg1/4 teaspoon ground gingerSalt and freshly ground black pepper Directions: 1. Preheat oven to 375 degrees F. 2. Place sweet potatoes on sheet tray and bake for 1 hour or until soft. Remove from oven and let stand until cool enough to handle. 3. Split potatoes and remove the flesh to a medium sized bowl, reserving skins. In another bowl, add brown sugar, butter and cream cheese and the all of the spices and mash with a fork or rubber spatula. 4. Add the butter and cream cheese mixture to the sweet potato flesh and fold in completely. Add the filling back to the potato skins and place on a half sheet tray.
