Recipes Recipe: Atlantic Salmon with Orange Glaze 2/26/2020 | By Seniors Guide Staff Enjoy the following orange glazed salmon recipe, shared by executive chefs at some of the area’s finest senior living communities. ATLANTIC SALMON WHAT YOU NEED: 3 oz fresh salmon2 tablespoons mandarin orange glaze1 tablespoon crushed pecans 2 tablespoons canola oil DIRECTIONS: Pat salmon fillet dry and crust the flesh side with crushed pecans. Heat oil in a saute pan until just before smoking. Sear fillet crust side down until pecans become fragrant and slightly brown, approx. 1-2 minutes. Flip, cover with glaze and put in oven. Cook in oven at 375 degrees until glaze begins to brown and bubble and fish reaches internal temp of 140F. ORANGE GLAZE WHAT YOU NEED: 1 cup orange marmalade1/4 cup soy sauce2 tablespoons garlic, minced 1 tablespoon ginger, minced 2 tablespoons honey DIRECTIONS: Combine all ingredients and whisk. Store remainder in airtight container. Chef Nick says salmon is a year-round favorite with residents. It’s loaded with vitamins and antioxidants and a greatsource of protein and potassium. The orange glaze adds a hint of sweetness while adding garlic, ginger and honey, all healthy additions.
